Candied Kumquats
Ingredients Yield: depend on slicing thickness
- Kumquats, as needed
- Granulated Sugar, as needed
- 100g (1/2c) Granulated Sugar
- 100ml(1/3c+1Tbsp) Water
Instructions
- Combine water and 100g of granulated sugar in a small pot and bring to a boil. Once it has boiled remove from the heat and set aside.
- Slice the kumquats to desired thickness and remove the seeds.
- Add the kumquats to the simple syrup (the water sugar mix) and let soak for 2 minutes.
- Drain kumquats from the syrup an coat with more granulated sugar. (The simple syrup will have a citrus flavour, which would be great in cocktails).
- Place the coated kumquats on a sheet pan lined with a silicon mat or parchment paper.
- Let air dry for a day or two until sugar has crystallized or in a low temperature oven around 150 degrees Fahrenheit until the sugar crystallizes.
- Store in an airtight container.
