Beaver Tails

Beaver Tails

               Ingredients                                                               Yield:1 Doz. Beaver Tails
  • 180ml (3/4 Cup)         Milk
  • 15g (1 Tbsp)               Yeast
  • 40g (3 Tbsp)               Sugar
  • 5ml (1tsp)                  Vanilla Extract
  • 1                                Egg
  • 45g (3 Tbsp)               Butter
  • 300g (2 Cups)             Flour
  • As Needed                  Oil
  • As Needed                  Cinnamon/Sugar
  • As Needed                  Any Other Topping

                Ingredients
  1. Warm up the milk just a little. Add the brown sugar and the yeast. Leave for 10 minutes to foam up.
  2. Add the milk and yeast mixture to your electric mixer and beat with the dough hook for a few seconds. 
  3. Add the flour and mix for 5 minutes, until the dough is easily pliable.
  4. Cover the dough and let it rest for 1 hour. 
  5. Measure out dough so that each piece weighs 2-3 ounces. 
  6. Roll into balls. Using a rolling pin, roll the dough one way, until it forms an oval. 
  7. Heat a pot of oil to 375F and add the dough.
  8. Once it becomes golden brown on one side, flip it over until the other side is the same. 
  9. Remove the beaver tails from the oil and place on a tray covered with paper towel. 
  10. While the beaver tail is still hot, cover with the cinnamon sugar, or if you don't want that as your topping you can do whatever else you'd like. 
  11. This treat is definitely best served warm.

Toasted Marshmallow, Baked Cookie, Ice Cream Cone

                Ingredients                                                               Yield: 1 Ice Cream Cone
  • 1                 Waffle Cone
  • Handful       Cookie Dough
  • Scoop          Ice Cream
  • Scoop          Melted Chocolate
  • Scoop          Marshmallow Fluff        
           
               Instructions
  1. Roll the cookie dough into the shape of your waffle cone. 
  2. Press it into the bottom of the cone. The cookie dough should come half way up the cone. 
  3. Place the cone in the corner of a loaf pan so that it stands up.
  4. Bake in a 300 degree F oven for 20 minutes.
  5. Once the cookie has baked, remove from the oven. Let the cone cool for a few minutes. 
  6. Scoop in your favorite ice cream. 
  7. Spread or drizzle the melted chocolate on top of the ice cream.
  8. Let it harden for a few seconds.
  9. Scoop on the marshmallow fluff and spread around evenly.
  10. If you have a kitchen blow torch, you can toast the marshmallow. 
  11. Dig in and enjoy!

Tiramisu

Tiramisu

                 Ingredients                                                               Yield: One 13X9 Pan
                                                                                                           or 10 individuals
  • 5                       Eggs (Separated)
  • 80ml (1/3 Cup)  Marsala Wine
  • 200g (1 Cup)      Sugar
  • 450g (3 Cups)    Marscapone Cheese
  • 240ml (1 Cup)   Espresso
  • At least 16        Lady Fingers
  • For Dusting       Cocoa Powder
                 Instructions
  1. In a bowl over a double broiler add the egg yolks, Marsala wine and half of the 200g of sugar.
  2. Whisk for about 10 minutes, or until the mixture become much lighter, thicker, and a ribbon like.
  3. Once you have reached that stage, take the bowl off the heat and whisk for a minute to cool it down. 
  4. In a separate bowl whip the marscapone cheese for a few seconds so it becomes smoother and easier to mix.
  5. In a separate bowl add your egg whites. Whip them until they become foamy. Gradually add the rest of your sugar while continuing to whip. Egg whites need to be at a soft peak stage.
  6. Fold your egg and Marsala mixture into the marscapone. 
  7. Then fold in you egg whites. 
  8. Place the mixture in the fridge for at least an hour. 
  9. Brush the lady fingers with the espresso on both sides. Make sure they are fairly well coated, but not soggy. 
  10. Scoop your marscapone into a piping bag with a nice tip of your choosing. 
  11. Lay down the bottom layer of you lady fingers. 
  12. Pipe the mixture into a circle on your bottom lady fingers, but leave a small space before the edge so when you place the next lady finger on it won't ooze over. 
  13. Do a quick dusting of cocoa powder on each tiramisu. 
  14. Place the next lady finger on top. And do the same thing with the piping. 
  15. Do another dusting of cocoa powder.
  16. Do one more layer so that you have a total of three layers of each component. 
  17. Place the finished tiramisu in the fridge, so that marscapone sets completely. 
  18. Serve anytime after that. Enjoy!
